If you were of the lucky fans who received this coffee in our annual Holiday Gift Set box, then you know how amazing this coffee is. A number of years ago Alberto's neighbor up the hill gifted him a handful of Centroamericano seeds. Hacienda Sonora already had a crop of Centroamericano variety coffee that is certified by the government as genuine. For fun Alberto planted this seedstock in his personal garden and it has grown extremely well over the last few years developing a unique flavor profile completely different from the Centroamericano lots he was already growing. Since this coffee is not certified seedstock it is sold as H1 Hybrid but for all intents and purposes it is Centroamericano and was excellently processed on the patios outside the main house at Hacienda Sonora. We specially selected this coffee for our holiday box, but purchased a little bit extra to share with each of you!

They are the perfect coffee producing team and together they process many different excellent varieties. Their success comes from Alberto's cleanliness and expertise in sorting. The mill at Sonora Estate is the cleanest mill we have ever been to, it gets meticulously cleaned after every processing day and each batch is expertly watched by the team from beginning to end.
Alberto and Diego have invested a lot of their profits into expanding their operation, purchasing larger drying machines, color sorters, and logistics materials. These may not seem important but when scaling a coffee farm from small to medium volumes these are the processes that help a coffee farm grow.
