Roaster's Notes:
This lot comes from Sawana Village in the highlands of Shakiso, part of Ethiopia’s renowned Guji Zone, where elevation and climate create ideal conditions for slow cherry maturation and complex cup profiles. Processed at Yemsrach Teshome dry mill, the coffee is carefully sun-dried on raised beds for up to 18 days, allowing sugars to concentrate and fruit character to fully develop.
In the cup, expect a vibrant expression of classic Guji natural—layered berry sweetness, soft florals, and a rounded, confection-like finish. The 74110 variety brings structure and clarity, while local heirloom cultivars add depth and aromatic complexity. The result is a balanced and expressive coffee that highlights both its origin and careful processing.
