This is a special coffee for us here at Victrola, as it is a direct partnership with the producers in Colombia. The wonderful and passionate folks at A Coffee Colombia brought this coffee to us shipped directly from the mill.
Grown at El Recreo and El Renacer farms and processed at Finca Isaza, one of the most important aspects of this coffee is its connection to the soil. Through ongoing soil conservation programs, the producers work to protect soil microbiology and support truly sustainable coffee production year after year.
At Finca Isaza, every stage of processing is carefully managed. Cherries are hand-sorted one by one, then floated to remove low-density beans and other defects. The coffee is initially dried in a greenhouse with controlled temperatures maintained around the clock to minimize the risk of fungal development. After this stage, the coffee continues drying and enters a resting period known as “Guarda,” which allows the beans to stabilize and develop consistency before export and roasting.
