Roaster's Notes

Entizar Zalan is a part of the new generation of coffee producers. She was raised around coffee, as her family is a prominent coffee producing family in commodity coffee. She knew that she wanted to do something different and as a result she established her own exporting company with her husband. This gave her the outlet she was searching for to explore specialty coffee, by promoting beautiful coffees and projects with her husband’s farms. She also fell in love with the direct relationships between her and roasters across the world. In 2016 she had the chance to take over a coffee farm in Dipilto, Nueva Segovia, Nicaragua. She purchased Finca San Jose, a farm that was in bad conditions
and needed her expert touch to change and grow into its full potential. She began renovations, planted new shade trees, adopted agricultural techniques, and after 5 years of hard work Finca San Jose started to show results with beautiful coffees. The work never stops in the coffee producing world but we are excited for the change and growth that this amazing producer can achieve!
