It all started a couple weeks ago. I started hearing bits and peices of small conversations between baristas. "Have you heard...?" "Did you try the sample of the ..." "Can you believe that Austin drank four cups of ... from the pour-over station during his shift on Saturday?" All of this excitement over, what? A complex, high grown, widely sought after coffee from the Sulawesi island of Indonesia. The coveted Sulawesi Toraja Sapan Minanga is grown at 4,300- 6,600 feet on the slopes of the Sesean Mountain range. This Sulawesi is processed using the traditional wet hull method and is reminiscent of an earlier era- the coffee is full bodied, nutty and spicy, all topped off with a subtle earthiness.
