It’s great to be welcoming one of our most favorite coffees back onto our menu: the explosively floral and complex Yirg-Z. The vast majority of coffee in Ethiopia is grown by small-hold farmers, who take their ripe coffee cherries to a local mill for processing and drying. Coffee trees cultivated in Yirgacheffe are wild and heirloom varieties that grow in the ecosystem they evolved in. This ancient relationship between the coffee trees their environment enables the plants to grow well beyond 1800 meters above sea level. The “Z” in “Yirg-Z” stands for “zero defect”, which indicates the remarkable sorting process the producers of this washed coffee employ. Beans are hand sorted for defects for 10 minutes per 10 kg rather than the conventional 2 minutes per 24 kg. These meticulous processing practices result in a strikingly clean and complex cup.
In the dry aroma you’ll immediately notice a floral characteristic reminiscent of fresh lily or gardenia. This note persists with exceptional clarity in the cup. Lily, fresh ginger and orange immediately grab your attention, lingering on the palate as complex low-tones of cinnamon, butter cookie, fennel and white pepper begin to shine through. A sparkling acidity steadies the complex flavors through to a rich, juicy finish.
