Our Ethiopia Yirgacheffe Yirg-Z has been menu favorite in the Roastery for many years. It’s easy to almost take for granted just how incredibly good it is--until we brew a freshly roasted cup and fall in love with it all over again. For centuries Yirgacheffe has been renowned as one of earth’s great coffee regions, but it’s the meticulous sorting and milling practices that elevate Yirg-Z to a category all it’s own. After the perfectly ripe coffee is pulped and washed, it is dried in its parchment for around two weeks. Each day between the hours of 11am and 3pm the coffee is covered to protect it from the scorching hot African sun--preserving the coffee’s delicate embryo. Once the coffee is dry, the parchment is hand-sorted by a team of mill workers--who are paid double the average wage--for the first time. This removes all of the most obvious defects. The parchment is then removed and the coffee is hand-sorted two additional times to ensure that 100% of the defective beans have been removed. This rigorous sorting lends the Yirg-Z its name--as the Z indicates “Zero” defect.
The fruits of this rigorous sorting--literally and figuratively--are quite evident in the cup.
Delicious and tantalizing notes of apricot and ginger are joined by delicate hints of chamomile and lemon. Yirg-Z has a mouth-wateringly juicy body. Its sparkling acidity shines and carries all these wonderful elements through a wonderfully floral finish.
