San Cristobal are a unique case in terms of importers. Being a vertically integrated group, they own almost every step in the process. The dry mill, the export business, the import business, etc. This allows them to have direct input with how coffees are grown, harvested, processed, handled, exported, and sold. This also means that producers receive direct feedback, financial assistance, and a guaranteed buyer for every harvest.
Victrola has worked with San Cristobal since 2014, and frequently purchases from their La Yerba group. La Yerba offerings are women-owned farms that are then blended together at the dry mill, El Duende. David, our Head Roaster & Green Buyer, has worked with San Cristobal since before his time here at Victrola as well. He was able to sit down with Jacob and Kenny, Green Coffee Trader and General Manager, respectively, to learn more about what San Cristobal does.
During this conversation, David mentioned some tasting notes he has always come to love in coffees from the Americas, and Jacob and Kenny responded with, “We can do that.” Because San Cristobal has a full lab in Tepic, the nearest town, and own the dry mill, they are able to create nearly any blend imaginable. In fact, they do this on a regular basis - each community sort is carefully blended and tasted at different ratios. And, because they work so closely with these producers, they’re able to come up with a general idea of what they’ll put into a blend before even trying.
Ultimately, the team ended up on this blend. 100% from the women’s group La Yerba, and a blend of 10% Bourbon, 75% Caturra, 15% Mundo Novo.
When David, Jacob, and Kenny met up again to discuss how things were going, the coffee was being prepared for export. Victrola was able to purchase the entire 19 bag lot, rather than letting some of it go to SPOT for other roasters to purchase. Because of the uniqueness of this coffee, and all of the work that went into it, we wanted to enjoy it for a long time.
