Roaster's Notes:
In 2017, we had the pleasure of working with Diego of Sonora Coffee, a farm and mill in Costa Rica’s Central Valley, situated in the shadow of the Poás Volcano. On the hunt for a truly special coffee, we tasted a handful of individual farms’ coffees being milled at Sonora Coffee. In the end, we landed on this one, from Don William Murillo’s 25 hectare (61 acres) farm. After the farms in the region finish their harvest, they truck their parchment to Sonora Coffee to be milled. There, they are mostly blended together. Since we began our partnership with Sonora Coffee, they have been setting aside Señor Murillo’s coffee to be milled by itself, for Victrola.

Sonora Coffee’s mill, located on their farm Hacienda Sonora, is 100% powered by hydroelectricity from a natural water stream on the farm. This, coupled with the water-friendly natural process and shade-grown plots, makes their processing truly one of the most environmentally friendly operations.

Diego at Sonora Coffee has informed us that this is likely the last harvest we can expect from Señor Murillo’s farm, as he has become ill and doesn’t have anyone to continue running the operations at the farm. Diego notes that Costa Rica is facing the challenge of aging coffee producers.
