The wonderful and passionate folks at A Coffee Colombia brought this coffee to us shipped directly from the mill.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eGrown in the mountains of Huila between 1,700–1,750 masl, and produced primarily by El Mirador, along with neighboring farms El Renacer and El Recreo, and processed at La Unión mill, this coffee reflects the unique conditions of a region known for its dramatic day-to-night temperature swings. These shifts slow cherry maturation, contributing to greater sweetness and complexity.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThe farms are managed using agroforestry practices that maintain continuous soil cover and promote long-term soil health. While not organically certified, the producers prioritize cultivation methods that minimize the use of agrochemicals and support a thriving ecosystem at the farm.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eProcessing begins with 24 hours of fermentation in cherry, followed by depulping and a 30-hour fermentation in tanks.
