Roaster’s Notes:

This incredible lot is sourced from a few small communities connected to one another in the famed Haraz mountains. Our friends at the Rayyan Mill in the capital city of Sana’a have been working with farmers and communities within Yemen to source new coffees and improve quality standards for many years now. They encountered this Asrar Haraz lot a couple years ago late in the harvest season, and have been working with the farmers in the region ever since. They have been teaching better pruning, harvesting and drying techniques to the communities, and have provided tools to help farmers build Ethiopian-style raised drying beds to further improve the quality of the coffee. It’s easy to see that all this hard work has been paying off when you taste this coffee. Yemen is one of the driest and water-scarce countries in the world, and as such all coffee in Yemen is produced using the natural process--meaning that the coffee fruit is dried on the bean. This method contributes to the characteristically fruit-forward and complex flavor for which Yemen is legendary.


You’ll immediately notice fragrant notes of resinous woods like sandalwood and ponderosa pine in the aroma. Rich red fruits like dried cherry and strawberry soon follow. In the cup, black pepper, date, fig, jaggery, leather and an ever-so-subtle note of sweet durian fade in and out through a richly flavorful finish. A smooth, syrupy body and mellow acidity balance out what is truly a magnificently complex cup of coffee.

  • 20.4 g of coffee
  • Grind out about table salt coarseness 
  • 300 g of water at 204°
  • Bloom with 60 g of water for 30 seconds
  • Finish pouring 300 g of water at about 1:20
