It has been a few years since we featured a coffee from Nicaragua on our single-origin menu, and tasting this coffee made us wonder why it’s been so long. We’re pleased to introduce this delectable lot from Luis Alberto Balladerez and Finca Un Regalo de Dios. Luis Alberto is the owner of Beneficio Las Segovias. An exemplary dry mill well known in the area and abroad for producing exceptional coffee. Luis Alberto is a bit unique among mill owners in that he owns and manages three of his own farms--one of which is FInca Un Regalo de Dios. His experience as a farmer, along with a discerning eye for quality, and commitment to excellence down to the detail are several reasons why so many other farmers in the region look to him for advice and trust him day in and day out to process their coffees.


This particular lot-- an exclusively red catuai lot called Lot 43--is from a section of the farm called “El Salvador”. The farm is around 120 acres in size, and is arranged into named sections based on altitude--which  ranges from 1500 to 1800 meters above sea level. Unlike most washed coffees which are wet-fermented before washing, this lot It is dry-fermented for 8 hours, and then washed with a small amount of sticky mucilage still intact on the bean. This method contributes to the nice fruit-like acidity that you’ll notice in the cup.


In the dry aroma, notes of oak, fudge, vanilla and plum are in delicate display. When brewed, the oak and chocolate fudge notes remain, and are accompanied by fruit-forward notes of pear, prune and cherry cordial; and deliciously nutty notes of chestnut, and pecan. This is a very sweet cup with a soft, pear-like acidity and a clean, lightly oaky finish. Notes of sweet rice cereal and a hint of sage round out an exceptionally well-balanced cup.
