The Ethiopia Sidama Ardi has been a Victrola favorite for many years, and we are thrilled to have it back on our menu again this year. We purchase this beautiful coffee through our great friends at Keffa Coffee.
Ardi is the importer Keffa Coffee’s signature offering. It was named to honor the discovery of the skeleton of the oldest human ancestor, Ardipithecus ramidus, a 4.4 million year old skeleton that was discovered along the nearby Awash River in Ethiopia around the same time this beautiful coffee was first being selected.
This coffee is grown by a multitude of smallholder farmers focused around the town of Hager Mairam in the Guji region of Oromia. The area is known for its strikingly green highlands, steep slopes and adjacent forest reserve. After small farmers harvest their coffee and bring it to their local mill, hundreds of skillful workers continue to sort out overripe and under-ripe cherries. The coffee dries on raised beds for 8-10 days, and is rotated every 30 minutes to promote even drying. The time spent on the raised beds is complemented by 2-3 days of final drying on a concrete patio. This careful attention during natural processing ensures each bean carries the full, distinctive Ardi flavors and aromatics.
During the harvest Keffa’s dedicated team of cuppers tastes hundreds of lots from the community in search of the spectacular cup quality that Ardi has become well known for.
